White wine obtained with overriped grapes

The bunches are medium, cylindrical-pyramidal and not too compact, with medium raisins of spheroidal shape, thin skin of a yellow-greenish colour. The skin becomes golden or also amber if exposed to the sun.



Vineyard: vineyard partially terraced to contrast the steep slope and consequently favour the transit of small tracks and stop the flowing of the water. The soil is mostly clay with East exposition.

Cultivation of the vineyard: the vines are grown with Guyot (VSP trellised) system.

Harvest: the grapes are collected by hand with accurat e selection of the bunches. In the vintages of exceptional features, we choose the best bunches and the sparsestones of Moscato and we let them over ripe in the vineyard until the middle of October, beginning of November (the harvest is after the one of Nebbiolo).

Vinification: the grapes just harvested, arrive in the winery, where they are soft pressed to extract from the skins and the outer area of the grape only the most noble and aromatic fractions. The wine obtained ages in stainless steel thermo-conditioned tanks for almost one year before the bottling.

Alcohol degrees: 14,5% vol.

Colour: giallo dorato.

Nose: the aroma is extraordinarily fragrant and aromatic, it is easy to detect sweet and fruity scents, in particular ripe apricots and honey.

Taste: at the taste is velvety, balanced and persistent.

Serving temperature: room temperature, 18 - 20°C.

Food matches: jewel of great elegance and complexity it well-pairs desserts but also mature cheeses and foie gras.
