Grape variety: Arneis 100%
The bunches are medium-small, cylindrical-pyramidal and compact, with medium-small raisins of ellipsoidal shape and of a yellow-greenish colour. The skin becomes golden if exposed to the sun.
Vineyards location: Ruvai Bas in the village of Santa Vittoria d’Alba. The soil is mainly composed by fine clay and sand with North exposition.
Cultivation of the vineyard: the vines are grown with Guyot (VSP trellised) system.
Harvest: the grapes are collected by hand with accurate selection of the bunches. Usually between the first and the second week of September.
Vinification: the grapes are soft pressed, the must obtained starts the fermentation. Stored in stainless steel thermo-conditioned tanks before the bottling.
Alcohol degrees: 13% vol.
Colour: straw-yellow colour with greenish reflections
Nose: rich in wide primary aromas and floral fragrance. Particularly emphasized are the fragrances of peaches and apricots with final notes of camomile.
Taste: the taste is fresh, lightly mineral and dry, well structured and harmonious.
Serving temperature: 12 - 13°C.
Food matches: it is recommended as an aperitif.
This wine goes very well with fresh appetizers and asparagus. It pairs nicely with fish as well. It expresses its best with the following dishes: Cappone in gelatina (capon in aspic), Asparagi al burro (buttery asparagus), Carpione di zucchine e uova (soused courgettes and eggs), Vitello tonnato (veal with tuna sauce).
