The bunches are medium, cylindrical-pyramidal and not too compact, with medium raisins of spheroidal shape, thin skin of a yellow-greenish colour. The skin becomes golden or also amber if exposed to the sun.
Vineyard: vineyard partially terraced to contrast the steep slope and consequently favour the transit of small tractors and stop the flowing of the water. The soil is mostly composed by clay with East exposition.
Cultivation of the vineyard: the vines are grown with Guyot (VSP trellised) system.
Harvest: the grapes are collected by hand with accurate selection of the bunches. Usually in the end of August, beginning of September.
Vinification: the grapes just harvested, arrive
in the winery, where they are soft pressed to extract from the skins and the outer area of the grape only the most noble
and aromatic fractions.
The must is then refrigerated awaiting for the partial fermentation, in order that the carbon dioxide, which gives the sparkling texture to this wine, remains partially dissolved. The fermentation
is short, in order to preserve a generous quantity of residual sugar.
Alcohol degrees: 4,5 - 5% vol.
Colour: straw-yellow colour with golden reflections.
Nose: the aroma is fresh and fragrant. Unique, tempting with scents of sage flowers, lemon, tilia and acacia and fruits like apricots and peaches.
Taste: this wine presents a fine and persistent foam. The taste is sweet, fruity, reminding the palate of the just pressed grape must.
Serving temperature: 4 - 6°C
Food matches: this wine, pleasant and refreshing
is the perfect wine-pairing for
desserts. It expresses its best with the following dishes: Torta di nocciole (hazelnut cake), Bonèt, Pesche ripiene (stuffed peaches) and Zabaione.
