Grape variety: Dolcetto 100%
The bunches are medium or large, elongated and spare. The raisins are medium or small, the size varies from bunch to bunch; the skin is consistent and of a blue-purplish colour.
Vineyards location: Ruvai Bas in the village of Santa Vittoria d’Alba. The soil is mainly composed by clay and marl with East, South East exposition.
Cultivation of the vineyard: the vines are grown with Guyot (VSP trellised) system.
Harvest: the grapes are collected by hand with accurate selection of the bunches. Usually during the second half of September.
Vinification: the grapes just harvested, arrive in the winery, where they are soft pressed. The traditional fermentation is conducted in stainless steel thermo-conditioned tanks. Maceration lasts for around 8 - 10 days during which the wine is regularly recycled from the bottom to the top of the tank, to optimize the extraction on the polyphenols. The wine is then briefly aged in stainless steel tanks before the bottling.
Alcohol degrees: 12,5% vol.
Colour: the colour is ruby-red with intense purple hues in the foam.
Nose: the aroma is fresh, Dolcetto has particular distinct fruity scents of Morello cherry and prunes.
Taste: at the taste is fruity, dry and pleasantly balanced. Delicate almond aftertaste.
Serving temperature: 16 - 18 °C.
Food matches: it constitutes the perfect pairing for salami and cold cuts
in general, tagliatelle, poultry and cheese.
It expresses its best with the following dishes: Soma d’aj, Tajarin, Agnolotti all’arrosto,
Brodo (broth), Ris e còi (rice and cabbage), Frittata di cipolle (onions omelette),
Caponèt, Cipolle ripiene (stuffed onions), Bollito.
