Grape variety: Nebbiolo 100%
The bunches are small or medium, pyramidal-elongated, not too compact. The raisin is medium-small and the skin is consistent of a blue-blackish colour.
Vineyards location: Bric del Pin in the village of Santa Vittoria d’Alba. Sorì of Nebbiolo; vineyard partially terraced to contrast the steep slope and consequently favour the transit of small tractors and stop the flowing of the water. The soil is mostly composed by marl with South East exposition.
Cultivation of the vineyardo: the vines are grown with Guyot (VSP trellised) system.
Harvest: the grapes are collected by hand with accurate selection of the bunches. It is the most tardive harvest between the vine varieties of our Azienda Agricola, because it is collected in the beginning, middle October.
Vinification: the grapes just harvested, arrive in the winery, where they are soft pressed. The traditional fermentation is conducted in stainless steel thermo-conditioned tanks. Maceration lasts for around 8 - 10 days during which the wine is regularly recycled from the bottom to the top of the tank, to optimize the extraction on the polyphenols. The wine is then briefly aged in stainless steel tanks before the bottling.
Alcohol degrees: 13,5 – 14% vol.
Colour: the colour is ruby-red tending to garnet red.
Nose: the bouquet presents floral, fruity and spicy hints with a distinct scent of raspberry and currant.
Taste: at the taste it is well balanced and harmonious, rich and elegant. Persistent, of great personality.
Serving temperature: 18 – 20 °C.
Food matches: it expresses its best with the following dishes: Paté di fegato (liver
pâté), Lasagne, Snails’ omelette, Frittura dolce, Fritto misto, Uova in camicia (poached
eggs), Finanziera al Cavour, Fonduta di tartufi.
